This book has authentic recipes and easy to understand instructions. More importantly, it is a cookbookWITH PICTURES OF THE DISHES. Not the photography is amateurish but it is there and accuratelyportrays the recipes. I love Mexican cuisine and I find these scratch recipes authentic and easy evenfor the novice cook. In fact the amateurish photography is the only reason that I gave it 4 instead of 5stars but I know that it is being picky. I had my first taste of Mexican food one chilly fall evening along about 1953. My mother had received a care package from friends in New Mexico, stuffed full of tortillas and refried beans and tamales - all canned of course. It wasn't very good, but my Mother's deep and abiding love of Mexican food kept me hunting for better. So, I've been eating and cooking Mexican/Tex-Mex/New Mexican food for more than a half century. Cooking Dude John Choisser has included a small but well chosen selection of long time, easy to produce favorites in Mexican Cooking Dude Cookbook -- Authentic Mexican Recipes from Mexico and the American Southwest.The book is very nicely laid out. John takes the concept of a fully interactive Table of Contents one step further by also linking to other recipes where appropriate in the text, making Mexican Cooking Dude Cookbook -- Authentic Mexican Recipes from Mexico and the American Southwest very easy to use. And yes, there are pictures - at least one for each recipe, all clearly John's own.It wouldn't be "Mexican" without beans - and not just refried. You'll find recipes for four different styles of bean, plus refried. One note - authentic Mexican-style beans include an herb called epazote that is almost impossible to find outside of the Southwest. Epazote, which has sort of a resiny, oily smell -truthfully somewhat reminiscent of gasoline - serves a couple of purposes. It adds an indefinable "something" (you'll know if it isn't in there, but the beans are not unpleasant if it is) and its inclusion seriously reduces any intestinal distress, bloating or gas that eating beans might cause. If you can't find epazote, feel free to grow your own - very easy to do. One plant will be plenty, maybe for years. This is not a small plant by any stretch, unless perhaps you keep it as a houseplant. If you're using fresh, just substitute a couple of twigs about 6 inches long for the dried epazote that John calls for and fish the remains out of the pot before you serve up.You'll find recipes for Chimichangas, Enchiladas, Guacamole (the real stuff, not the mess with mayo added), Carne Asada and more, along with a number of variations for most of them, but my hand's-down favorite - one I can highly recommend and hope you'll try - are the San Diego's Fish Tacos. (I do make mine a little bit differently. I add a teaspoon of salt, the cilantro and the juice of 1 lime to the cabbage to wilt it a bit and pickle it just slightly and I add 1/2 teaspoon ground cumin to a half mayo-half yogurt mix for the white sauce.) There is nothing better than a good Fish Taco - easy to make, wonderful to eat and even the kids will like them. You can feed a big crowd for the price of 2 little ones at a Mexican restaurant.Grandma's $0.02 - You are in for some good eating from Mexican Cooking Dude Cookbook -- Authentic Mexican Recipes from Mexico and the American Southwest. Grandma has just one teeny little complaint. The Cooking Dude signed off to go have himself a Margarita and didn't include the recipe!Two thumbs up! Recommended
I had never heard of the Cooking Dude but I love Mexican food so I snagged this when it was on a freebie promotion. So. Glad. First of all, the author makes guacamole the way God intended it to be made--with Haas avocados and no sour cream or (shudder) mayonnaise to complicate things. I like a grating of red onion and I use Cholula instead of Tabasco but John Choisser's basic recipe for the staple of any Southern California kitchen gets a thumbs up. All of the recipes I've tried are simple and delicious. (I REALLY liked the tortilla soup.) And as odd as it sounds, I served the Jalapeno peanut butter boats at a party and they were snapped up as fast as I put them out.
I can not vouch for how authentic the Mexican Cooking Dude Cookbook --- Authentic Mexican Recipes from Mexico and the American Southwest recipes are, but I can tell you the author, John Choisser, has presented some Mexican-style recipes in his cookbook. His recipes for Pot Beans and Refried Beans are probably true to Mexican cooking while some of his other recipes are variants. Of course this is my personal opinion, and I grew up eating Sonoran-style Mexican food which is different than what is typically found in California.Some of the recipes you will find in his cookbook include:Juan's Refried Beans (Refritos)Mary Ann's Avocado Relish (Salsa)San Diego's Fish TacosYou will find plenty of color photos illustrating the various recipes and an interactive table of contents.Recommend.Penmouse
Well, it was ok, if you don't know anything about Mexican or Spanish food. But I do, so I didn't find anything new or different in the receipes .
Enjoyed the recipes. Want to make them all. Guess I will have to make them one at a time or have company to try all. Get this book it is great.Will recommend.
Really good recipes, without having to track down hard to find ingredients. It's always nice to be able to cook right out of the pantry and end up with a healthy and tasty meal. Great job Cooking Dude!
Simple recipes that I don’t need a cookbook for. Probably fine for a beginner but I found it very thin.
Received right away and looked at recipes and sounds yummy. My son is a chef and he WANTS to try them. That is wonderful to hear for a cookbook.
